Orange Topped Carrot Cake

This is one of my absolute all time favourites. I could literally eat it every single day, but that really wouldn’t be very good for you, would it, even though it has carrots in! But when you fancy a treat, it has to be this scrumptious orange topped carrot cake – Yum….

So this is what you need for the cake:

  • 2 medium eggscarrot-cake-squares
  • 225g self raising flour
  • half teaspoon of ground mixed spice
  • 150g carrots, peeled and grated
  • 150ml sunflower oil
  • 150g soft brown sugar
  • 30ml milk

For the topping:

  • 50ml butter
  • 225g icing sugar
  • 30ml orange juice

How to make it:

  1. Heat your oven to 180ºC/gas mark 4
  2. Grease and line a 23cm/9 inch cake tin
  3. Seive the flour into a large bowl and mix in the mixed spice
  4. Stir in the sugar and grated carrots
  5. Make a well in the centre of the mixture and add the oil, milk and eggs
  6. Beat vigorously with a wooden spoon until blended and creamy
  7. Pour into the prepared tin and bake for 40 minutes
  8. Remove from the oven and turn out onto a wire rack to cool
  9. Melt the butter slowly in a pan and add the orange juice
  10. Remove from the heat and beat in the icing sugar until you have a smooth creamy consistency
  11. Spread the topping over the cooled cake and use a fork to create a peaked or patterned finish
  12. Finally cut into 9 squares and top with orange coloured icing or marzipan shapes

Voila the perfect treat!
